Observed employee handwashing sink, by the three compartment sink, without paper towels available. An employee replaced the paper towels, at time of inspection. Discussed maintaining soap, paper towels, and a trash basin near ALL the handwashing sinks. Hand drying provisions MUST be single-use. Handwashing sinks to be ALWAYS maintained unobstructed and assessable.

PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. Observed meat marinara, (127°F), cheese sauce (130°F) and meatless marinara (118°F) below 135°F in the hot holding unit across from the fryers. Staff stated the Time Temperature Control for Safety (TCS) foods had been placed in the unit at 11 am (more than 4 hours prior to temperature measurement). Staff discarded the sauces at time of inspection (see embargo). The cook plans to reheated the new batches of sauce to 165°F before placing them back in the hot holding unit. The hot holding unit was also adjusted to a hotter setting. Discussed hot holding and reheating for hot holding requirements with staff

Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed black-tarry-grease build up underneath the fryers, under the ice machine, and on the floors of the walk in. Also observed debris and grease in the back corner near the CO2 dispenser. Establishment must be cleaned frequently enough to prevent the accumulation of dirt, organic matter, and food debris. Must clean prior to next routine inspection. Repeat violation. This is the third consecutive violation. Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed a large square hole in the ceiling near the walk in covered with particle board. The area must be smooth and easily cleanable and not made of porous-absorbable materials. Proper repair is required. Do not use unapproved methods. Establishment to fix the ceiling by the next routine inspection. Repeat violation. This is the third consecutive violation.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
