Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold
Holding. >>> At first reach-in cooler, across from upright freezer, observed shredded cheese, sliced
tomatoes, cut lettuce, peeled hardboiled eggs and sliced deli turkey with internal temperatures of
47*-51*F. All TCS (time/temp controlled for safety) foods must be held at 41*F or below. Ambient
temperature of reach-in 52.1*F when measured with inspector min/max thermometer. Person in Charge
(PIC) stated that food items were placed in reach-in less than 4 hours prior. PIC removed TCS foods
from reach-in and used ice bags to rapid cool and maintain foods at 41*F or below. PIC will monitor
temperature of reach-in cooler and contact service vendor. For a permanent fix to this violation, check
