Priority Foundation-6-301.11, Pf: Handwashing Cleanser, Availability. Observed no soap available at back handwashing sink near warewashing area. Handwashing cleanser must be available at all handwashing sinks to ensure proper handwashing. Mounted automatic soap dispenser stored on table next to sink and, per Person in Charge (PIC), batteries were removed. Discussed importance of cleanser availability at all handwashing sinks to ensure proper handwashing. PIC placed a bottle of hand soap at sink. PRIORITY VIOLATION-3-302.11 (A1-2), P: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; Protection From Cross Contamination. In walk-in refrigerator, observed packaged RTE (ready to eat) turkey stored on shelving below packaged raw beef and a sheet pan of uncovered raw bacon stored on cooling rack above a RTE charcuterie board of meats and cheeses and a container of sliced RTE meats such as ham and pepperoni. In upright two door refrigerator, across from the 2-compartment sink, observed a container of portioned raw ribeye stored above a container of RTE cubed ham. Raw animal foods shall be separated during storage, preparation, holding, and display from raw RTE foods and cooked RTE foods. Discussed importance of proper food storage in preventing cross contamination with Person in Charge (PIC). PIC moved raw animal foods for proper storage.
