Nozzles were noted to have a small buildup of food debris within the device. Per the PIC, the liquid was club soda and the nozzles are put in the soda every night to be cleaned. Inspector explained to the PIC that club soda does not remove food debris nor does it sanitize food contact surfaces. PIC stated the nozzles would be run through the dishwashing machine to be washed, rinsed and sanitized. Non-TCS food contact surfaces of equipment and utensils shall be cleaned at a frequency specified by the manufacturer, or absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.

A kitchen employee stated they would scrape the grease and thoroughly clean the area in question. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Due to COVID-19 concerns a signature was not obtained from the operator during this inspection. The inspector verbally reviewed the establishment's inspection rights with the person in charge (Trent R.) and delivered a copy of their inspection rights with the inspection report. This establishment received an A Grade and had 0 Priority, 0 Priority Foundation and 3 Core violations on this inspection. No County legal action will result from this inspection. Discussed pest control measures, distressed merchandise and good repair of backflow prevention devices with the PIC during this inspection. Inspection report delivered via email.
