A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. PRIORITY VIOLATION-3-302.11 (A1-2), P: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; Protection From Cross Contamination. In reach-in refrigerator across from stove, observed raw chicken in buttermilk stored above a pan of cheese bread and a container of marinara. In the walk-in refrigerator, observed a flat of raw shell eggs stored above a container of strawberries and a plated serving dish of raw veggies. Raw animal foods shall be separated during storage, preparation, holding, and display from raw ready to eat (RTE) foods and cooked RTE foods. Person in Charge (PIC) moved raw chicken and raw shell eggs for proper storage. Discussed proper storage of foods with PIC.
