Maintain hot TCS food at or above 135F. It was determined that food cooled during packaging. The sandwiches were properly reheated in the oven and returned to the warmer.

Maintain cold TCS food at or below 41F. Staff to use deeper, metal pans at the salad bar and monitor temps. Time as a control was also discussed as an option.

The certified food manager arrived at time of inspection. This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. Confirmed emailed report was received.
