Per person in charge salsa had been cooked the night before. Salsa was embargoed and discarded at the time of inspection. Hot foods must cool from 135-70 *F within 2 hours and from 70-41 *F within 4 hours (6 hours total). Foods should be portioned out into shallow containers 4 inches or less in depth or use ice wands/ice baths for bulk sauces and salsas.
