PRIORITY VIOLATION-7-202.12, P: Conditions of Use Observed chlorine chemical sanitizer in the bar-side dishwasher measuring at 200 PPM. Employees plan to use the main kitchen dishwasher, which is within the appropriate range, to sanitize dishes until the bar-side dishwasher can be serviced. Reeducated staff on the recommended range of use for chlorine (50-100 PPM) and discussed toxicity concerns when sanitizers are used above the recommended range

Core-3-307.11, C: Miscellaneous Sources of Contamination Observed wings stored on the floor in the inside walk-in. Manager was alerted and re-educated on the 6-inch storage requirement to protect foods from potential contamination by the premise. Also observed, standing water and dirt in front of the doors to the outside freezer and outside walk in. The establishment currently has a construction project out back (by both the outdoor freezer and outdoor walk in). Establishment is to manage these sources of contamination and clean frequently to reduce risk. Educated staff on sources of contamination.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed a handwashing sink, by the inside walk-in, with a heavily rusted components and a handwashing sink, by the dishwashing area, with a leak underneath the basin. Also, observed a falling ceiling fan near the prep tables in the main kitchen. Establishment to repair both sinks and the ceiling fan before the next routine inspection. Discussed the importance of keeping equipment in good repair with manager.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 3 Core violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager: No certified Food Manager present at time of inspection. In Compliance with Food Code, Maricopa County now requires a Food Manager Present during operating hours. Emailed Maricopa Policy changes and additional resources of where to acquire a Food Manager Certification. Correct prior to next routine inspection. Establishment is currently running off of the generator. Repairs to outdoor electric connection being completed. Per operator, work should be complete within one week. EHS will visit establishment to verify completion at that time. Discussed handled-scoops, hot holding and time control options for cooked wings, and the written time control policy. Provided guidance for time control via email. No County legal action will result from this inspection.
