Observed large covered metal container of corn masa in walk-in refrigerator measuring 47 - 50 degrees F. All other food items in the refrigerator were below 41 degrees F. Person in charge (PIC) stated the corn masa was prepared and placed in the refrigerator 6 hours prior to inspection. Corn masa does not contain preservative. Advised PIC that the corn masa is a time/temperature control for safety (TCS) food which must be cooled from 135 degrees F to 70 degrees F in two hours, then further cooled to 41 degrees F in four hours. PIC discarded the corn masa and stated they will cool TCS foods properly. Provided County cooling handouts for reference.
