Advised PIC that areas which process/prepare foods must be free of pests and droppings to prevent contamination of food and food contact surfaces. Also, ensure that premises is only serviced by a certified pest control company. PIC stated they will clean the areas and ensure a certified pest control service is used.

Additionally, observed large hole in wall at base of stairs of tortilla production area. Advised person in charge (PIC) that walls and flooring shall be maintained in good repair so it is smooth and easily cleanable. PIC stated they will work to have the wall and floors repaired as soon as possible. Core-6-501.114, C: Maintaining Premises, Unnecessary Items and Litter Observed multiple items, home-style kitchen equipment, and older unused equipment stored throughout the tortilla production area that are not used for the production of foods. Advised person in charge (PIC) that only necessary equipment used to prepare, store, and serve foods shall be stored in production area to ensure proper cleaning and prevent harborages for pests.

Core-6-303.11, C: Intensity-Lighting Light in southern facility walk-in refrigerator, which is shared with kitchen, was extinguished and missing a lightbulb. Advised person in charge (PIC) that areas which store foods must be adequately lit to ensure proper visibility of foods and areas are cleaned to sight and touch. PIC stated they will have the light repaired.
