Walls, ceilings, and flooring shall be maintained in good repair so it is smooth and easily cleanable. Please repair prior to next routine inspection. 5TH CONSECUTIVE VIOLATION Core-6-501.114, C: Maintaining Premises, Unnecessary Items and Litter Observed a significant amount of old/unused items and equipment not used for tortilla processing operation being stored throughout processing areas. Advised person in charge (PIC) that old equipment and equipment that is not used for the operation of tortilla processing shall be removed to facilitate proper cleaning and prevent the harborage of pests. PIC stated they are in the process of having the unused items removed. 5TH CONSECUTIVE VIOLATION

This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation violations on this inspection. Processing area was not preparing tortillas at time of inspection. Per PIC, they only prepare a limited amount of tortillas once a month. Conducted facilities inspection. Core-2-102.12(A), C: Certified Food Protection Manager (CFPM): Establishment does not have a current CFPM. Advised Person in Charge (PIC) that the PIC shall be the Certified Food Protection Manager, and per paragraph 2-101.11, and be present during all hours of operation. PIC stated they will obtain a Food Protection Manager certification as soon as possible. The Environmental Services Department will begin emailing permit card(s) and permit invoice(s) to permittees in the coming months. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal.
