Observed the following food items cold holding at 45-51 deg F in a walk in unit that was holding out of specification. PIC discarded hot dogs and pre-portioned potato salad. PIC informed he had purchased another package of hot dogs and potato salad <4 hours prior and placed in freezer.

Discussed inspection rights document with Ralph M Manager and provided a report Re-inspection for walk in August 18 2021, According to PIC the next time the establishment is operational is August 27 2021 For the next Fish fry. Walk in is used exclusively for the Fish Fry event according to the PIC
