Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation.......... Table salsas in squeeze bottles, stored in reach-in under counter between use at customer tables, at 50*F internally, not marked for discard. Discussed if they were under the same time as control system as the portioned to-go salsas stored in the pan above. Manager determined the discard time for the table salsas and had them marked. Proper cooling methods used; adequate equipment for temperature control
Core-3-501.15 (B), C: Cooling Methods; Cooling containers......Hot salsa in deep, tightly covered container in walk-in at 60*F internally two hours after prep. Manager stated it was prepared from ambient temperature after opening cans. Reviewed proper cooling from ambient with manager and employee removed lid and placed container in ice bath to ensure it cooled properly to 41*F within 4 hour time allowed.
