At time of inspection, quaternary ammonium (quat) solution in sanitizing basin at 3-compartment sink measured at <150ppm. Please ensure quat sanitizing solutions are maintained at 150-400ppm. Person in charge (PIC) remade solution at proper concentration to correct during the inspection.

Container of chopped lettuce in burger assembly area was measured with internal temperature of 67 degrees Fahrenheit. Please ensure all time-and-temperature control for safety (TCS) foods are kept at 41F or lower. Per employee, lettuce was placed into container at sandwich prep line 1 hour prior to inspection. Lettuce moved to walk-in refrigerator for rapid cooling during the inspection. PIC developed written time as control for 4 hours policy for all other chopped lettuce during the inspection.

Core-6-501.112, C: Removing Dead or Trapped Birds, Insects, Rodents and other Pest PIC indicated that pest control services were recently on site but did not provide invoice at time of inspection. Unable to determine during the inspection whether rodent droppings underneath soda fountain were formed prior to or after the visit from a pest control service provider. Please ensure all animal droppings and dead insects, rodents, or other animals are promptly removed from the premises. Correct prior to next routine inspection. Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence During the inspection, observed a significant amount of rodent droppings on the floor underneath the soda fountain. Please ensure that the establishment is kept clear of pests and that all pest control measures are conducted by a certified pest control applicant. Re-inspection must occur within next 10 business days (1/26/2023).
