For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. ------ Observed premade salad containers tightly sealed and stacked inside a reach-in cooler by the servers station. The internal temperature of the salad was 56*F. Per PIC, the salads were prepped and stored in the reach-in cooler approximately 30min prior to this inspection. PIC relocated all salads to the walk-in cooler. The ambient temperature of the reach-in cooler was confirmed to be 56*F using a min/max thermometer (The min/max was left inside the unit for ~20min. Advised PIC not to use the unit until it can hold an ambient temperature of 41*F or below. PIC placed an "out of order" sign on the unit. After 30min, the premade salads (now in the walk-in) had an internal temperature of 50*F and dropping. Advised PIC to use the walk-in cooler instead of reach-ins for cooling food items.

Discussed examples of when to wash and handwashing procedure. Reviewed establishment's ROP cooling logs for dates 12/1, 10/3, and 11/4 at the time of the inspection. All logs were complete and accurate. Verbal acknowledgement of Inspection Rights by Sarah M. No County legal action will result from this inspection. Report emailed and verified with PIC.
