Observed boxes of raw ground beef being stored over container of beef cuts in walk in. Employee moved items to proper storage. Items must be stored in a way to prevent cross contamination.

Observed large buckets, more than 4 inches deep, storing raw chicken wings in middle reach in fridge on cookline. Chicken wings were observed at 47-50*F. Employee stated wings were taken from walk-in, rinsed, and then put into buckets and placed in fridge on cookline about 30 minutes prior. Cooling should take place in walk-in and in shallow containers to allow maximum amount of air flow and rapid cooling to meet proper cooling time frame. Checked wings about 30 minutes later and still temping at 47-50*F, had employee move items to walk in and place in smaller pans to rapid cool to below 41*F.
