PIC rearranged so that cross contamination would not occur.

PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition - In walk-in refrigerator several items were past 7 day discard date. Roasted garlic dated 5/1, green salsa dated 5/11, and pickled onions dated 5/11. All items were discarded and PIC will make sure TCS foods are discarded within 7 days. Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking - Sliced deli turkey was dated 5/17. PIC said that it was misdated and was actually prepared on 5/22. Item was re-dated and PIC will make sure all TCS items are properly dated for discard within 7 days.

This establishment received a(n) D Grade and had 3 Priority, 1 Priority Foundation and 0 Core violations on this inspection. No County legal action will result from this inspection. Currently establishment is undergoing a remodel. Temporary bar setup in lounge area has a hand wash sink that is further than 20 feet and around a corner in the server area. PIC will make sure that all items that require preparation are done in the main kitchen prior to moving to bar area.
