Observed raw ground beef stored above raw ribs. Raw meats should be stored based on cooking temperature to prevent cross contamination. PIC moved the ground beef to the meat walk-in. Provided proper storage handout.

Observed fish and pooled eggs in a small cold holding unit sitting on the counter at the cook line with temperatures ranging between 49*F-52*F. Proper cold holding temperature should be 41*F or below to prevent the growth of pathogens and ensure safety of consumers. PIC placed the food into the walk-in to rapidly cool down to 41*F.
