Observed no hand drying provision at the hand sink at the bar. Hand sinks should be well supplied to encourage proper hand washing. PIC had paper towels placed at the sink.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed pickled onions with an internal temperature of 50*F and hard boiled eggs with an internal temperature of 52*F in the left most cold holding unit at the cook line, and pooled eggs at 63*F in the small cold holding unit sitting on the counter at the cook line. Chef stated the onion and hard boiled eggs were placed into the unit from the walk-in at 3 pm and were placed into the walk-in to cool to 41*F. The pooled eggs had been there since this morning and were voluntarily discarded. Double panning food items not recommended.

This establishment is not participating in the award program at this time and had 1 Priority, 1 Priority Foundation and 0 Core Violations on this inspection. A pattern of non-compliance is developing for Priority violation # [20], [3-501.16(A)(2) and (B), P], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Report emailed to PIC. No County legal action will result from this inspection.
