Observed rack of ribs wrapped in plastic and stacked on top of each other in the right most cold holding unit at the cook line, made today per EC, with internal temperatures ranging from 48-52*F. Observed rack of ribs made this morning per EC, wrapped in plastic and stacked on top of each other in the walk-in cooler at 48*F. Proper cooling methods consist of placing the ribs on sheet pans, spread out, and left to fully cool in the walk-in prior to wrapping and stacking. PIC removed the ribs from the drawer and had them unwrapped and placed on sheet pans in the walk-in to rapidly cool to 41*F.
