Observed disposable plastic fork used to scoop red peppers in sandwich cooler completely submerged in food. During pauses in food preparation or dispensing, food preparation and dispensing utensils must be stored: in the food with their handles above the top of the food and the container or on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized at a frequency required.

Core-2-102.12(A), C: Certified Food Protection Manager - Person in charge could not provide certificate for certified food manager certification at time of inspection. The person in charge must be a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program. Fix prior to next routine inspection. 3rd consecutive violation. Priority Foundation-2-501.11, Pf: Clean-up of Vomiting and Diarrheal Events - Establishment could not provide written procedures for the clean up of fecal/vomit accidents. Provided person in charge copy of sample written procedures to use. A food establishment must have written procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. the procedures must address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. Corrected at time of inspection. Establishment is fixing front wall of establishment due to accident all construction is like for like and does not involve plumbing or other food equipment. Discussed chemical storage and datemarking procedures for continued training. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
