PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed cut tomatoes between 42-47*F internally, black beans at 54*F, corn at 51*F, and edamame at 50*F in the top of the left reach in cold holding unit at the cook line (salad station). Ready to eat time/temperature control for safety foods should be held at 41*F or below to prevent the growth of pathogens. PIC voluntarily discarded the black beans, edamame, and corn. The tomatoes were placed into the walk-in to cool since they were placed at the line one hour prior. The discarded foods had been there since this morning.

This establishment is not participating in the award program at this time and had 2 Priority, 0 Priority Foundation and 0 Core Violations on this inspection. A pattern of non-compliance is developing for Priority violation # [20], [3-501.16(A)(2) and (B), P], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Discussed date-marking. Inspection rights signed by Allen S. Report emailed to PIC. No County legal action will result from this inspection.
