A written agreement or statement from the supplier stipulating that the fish are frozen to a temperature for specified time must be retained on site of the establishment when raw fish items are sold.

Employee stated all items were prepared yesterday and have been in unit since yesterday and employee voluntarily discarded. TCS food items must be stored at or below 41*F to prevent growth of bacteria.

Observed plastic bags of cooked, chopped chicken to be knotted closed in walk in at 56*F. Employee had just finished chopping and bagging chicken and chicken is actively cooling. Employee unknotted bags. Items that are actively cooling should not be covered to ensure adequate air flow for cooling. Once item reaches 41*F then the bags can be closed, knotted, or covered in some way. Observed accumulation of dust and grease on fume hood grates, grease drips on perimeter of fume hoods, and grease build up on wall behind grill. Observed food residue on walls throughout kitchen area. Observed accumulation of food buildup under prep tables BOH and behind fryer/rice cooker station. Observed white residue resembling mold on metal racks in walk in. Also observed foul, mold-like odor in walk in. A reinspection will be conducted on Friday, 3/25/2022 to check for parasite destruction letter and prep fridge temperature. This establishment is not participating in the award program at this time and had 2 Priority, 4 Priority Foundation and 3 Core Violations on this inspection. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
