PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law Observed floor drain in kitchen to be clogged and not draining in a way to allow for free-flowing of water, rendering prep sink and only handwashing sink BOH unusable. PIC agrees to prop open kitchen door and use handwashing sink FOH until fix occurs. Please call for immediate service. Drains must allow for free flowing of water. A reinspection will be conducted, Wednesday, 7/13/2022, to check for free flowing of water through drain.

Core-6-501.12, C: Cleaning, Frequency and Restrictions Observed food debris accumulated under prep tables, under prep fridge, and around perimeter of kitchen. Observed dried liquid splashes on wall next to three compartment sink. Observed accumulation of grease on fume hood above grill, grease drips around front perimeter of fume hood, and grease on wall behind grill in kitchen. Observed general dirt/grime accumulation on wall/doors of walk-ins and a dried liquid drip on wall across from walk-in. Also observed food splashes on wall behind prep table and on warmer unit on back prep table. Please clean and clean at a frequency to prevent accumulation of dirt, dust, grease, organic matter, and food debris. Sixth Consecutive Violation

A pattern of non-compliance is developing for Priority violation #49, 5-205.15(A), which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. A reinspection will be conducted on Wednesday, 7/13, to check for free-flowing water of floor drain BOH to handwashing and prep sink. A reinspection will be conducted on Friday, 7/22, to check for repair/replacement of damaged rice warmers. Of note: Discussed proper use of three compartment sink with PIC as sanitizer must be used in right basin with direct draining to floor drain. This establishment is not participating in the award program at this time and had 1 Priority, 1 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. Report emailed to PIC.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
