PRIORITY VIOLATION-7-206.13, P: Tracking Powders, Pest Control and Monitoring Observed a white powder concentrated on baseboard under handwashing sink BOH and baseboard of wall next to three compartment sink. PIC stated the powder was placed by pest control and stated it was a chemical powder to kill insects. PIC could not provide an invoice for pest control measures at time of inspection. Tracking powders may not be used inside a food establishment. Remove powder prior to reinspection on Tuesday, 10/25/2022.

Observed sauce bottles in prep table fridge to have broken/cracked plastic tops. Also observed two pans stored with clean dishes above three compartment sink to be heavily used and scorched to create uneven surface texture. Replace so that utensils/equipment are smooth and easily cleanable, free of cracks/breaks/pits. A reinspection will be conducted on Tuesday, 10/25/2022.

PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap Observed spray arm at three compartment sink to be stored hanging below flood rim of basin. Had PIC move spray arm to be stored above three compartment sink, out of basin. An air gap is required between flood rim of basin and end of spray arm as backflow prevention to prevent contamination of water supply. Recommend replacing arm so that the end does not hang below flood rim, otherwise ensure the spray arm is stored above flood rim. Corrected At Time Of Inspection PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law Observed floor drain in kitchen to be clogged. Drain overflowed when inspector attempted to wash hands. Floor drain is not draining in a way to allow for free flowing of water, rendering prep sink and solo handwashing sink BOH unusable. PIC agrees to prop open kitchen door and use handwashing sink FOH until fix occurs. Drains must allow for the free flowing of water. Call for immediate service. A pattern of non-compliance for Priority violation #49, 5-205.15 has been noted during this inspection. The person in charge accepted the opportunity to attend the Department’s Active Managerial Control Class. Owner signed up for AMC class to take place on Thursday, November 3rd, 2022. This establishment is not participating in the award program at this time and had 4 Priority, 1 Priority Foundation and 2 Core Violations on this inspection. Due to the violations noted on this inspection report, County legal action may result from this inspection. Report emailed to PIC.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
