PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law ------ Observed a star-shaped crack in the basin of the hand sink in the back kitchen so approximately half of gray water from handwashing is allowed to freely run onto the floor or into a bucket stored beneath the sink. Discussed that plumbing must be maintained in good repair and according to law and that all wastewater must drain into an approved sewer system. The establishment has another hand sink near the ice machine in the front area that on the other side of the breezeway door and not in direct line of sight. A re-inspection will take place on 9/12/2023 to ensure the sink has been replaced. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained -------- Observed pooling water along the back wall of the establishment extending from the water heater to the 3 comp sink. PIC stated they had been closed for 3 days and had noticed the water forming. The water appears to be coming from a leak that formed around the water heater base which heavy rusting was observed. Advised PIC to replace water heater or identify and plug leak ASAP. Advised PIC to be self-closed while repair are being made if the water must be turned off. Advised PIC to mop up water as needed to prevent pooling. Observed more than 5 leaks coming from the commercial ice maker into small containers placed around the perimeter of the ice bin. Advised PIC to repair, replace or remove and purchase bagged ice from an approved source prior to the next routine inspection. All runoff from the ice machine must be directed to a floor sink. Core-5-203.13, C: Service Sink-----Observed no mop sink in this establishment. Establishment is currently dumping mop water down the 3 comp sink floor sink. Plumb and install a service sink for cleaning prior to next routine inspection.

Core-6-303.11, C: Intensity-Lighting ------- Observed a dim light installed in the walk in freezer so all areas of the unit were not fully illuminated. Ensure there is at least 108 lux (10 foot candles) inside walk in coolers. Also observed multiple bulbs throughout the establishment that had burned out and not been replaced. Advised PIC to replaced bulb with one bright enough to illuminate all areas of the walk in to allow for proper cleaning. The manager stated that the bulbs would be replaced as soon as possible.
