Discussed with the person in charge about obtaining a parasite destruction letter and maintaining one on file when serving raw, raw-marinated, partially cooked, or marinated-partially cooked fish as part of the menu. A reinspection for the parasite destruction letter will take place no later than Friday August 4, 2023.

The person in charge stated the bottle had been refilled with simple green cleaner then labeled the bottle "simple green" at the time of inspection. Discussed with the person in charge labeling refill bottles containing chemicals.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
