Observed black residue on ceiling section of ice basin in main ice machine. Advised person in charge (PIC) that equipment which produces and holds non-time/temperature control for safety (TCS) foods, such as ice, shall be cleaned to sight and touch and at a frequency to prevent residue build which can contaminate foods. PIC stated they will have the ice machine cleaned more thoroughly and frequently.

Observed large box of portioned, breaded mac and cheese bites in walk-in refrigerator with a date marking label of 4/29 - 5/7; food items held longer than 7 days. Advised person in charge (PIC) that ready to eat (RTE), time/temperature control for safety (TCS) foods must not be held longer than 7 days. Employee discarded the food items and PIC stated they will ensure RTE/TCS food are not held longer than 7 days.
