PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ===> Observed matcha and vanilla pudding, several packages of miso, cooked noodles and tofu cold holding in the walk-in refrigerator with internal temperatures of 47-49F, probe thermometer, verified by PIC. According to PIC, the temperature was at 41F or below in the morning (more than 4 hours before inspection). The following TCS foods will be discarded: cooked noodles, tofu, miso, and pudding, see embargo form. Proper cooling methods used; adequate equipment for temperature control
Priority Foundation-4-301.11, Pf: Cooling, Heating, and Holding Capacities-Equipment. ===> Observed an ambient air temperature of 48.5, min/max thermometer, verified by PIC, in the walk-in cooler that is used to store retail products and food for the bento lunch boxes. The hanging thermometer also read 48F. According to PIC, a repair technician serviced the walk-in the week prior to inspection and was holding at 41F. PIC contacted the repair tech during the inspection. The walk-in stores mainly non-TCS foods and beverages; see embargo form and violation #20 for list of TCS foods. Core-6-501.12, C: Cleaning, Frequency and Restrictions ===> Observed and accumulation of what appeared to be dust on the blades, front grill and rear coils on the blowers in the walk-in cooler. Discussed cleaning the blowers often enough to prevent accumulations and maintain the units in working order. See violation #31.
