Numerous out-of-temperature time-and-temperature control for safety (TCS) foods were observed in secondary walk-in refrigerator with internal temperatures between 51 and 57 degrees Fahrenheit. Please ensure TCS foods are kept cold at 41F or colder. Items were located in walk-in that was not holding cold during the inspection. Per PIC, items were placed in unit after delivery approximately 2 days prior to inspection. Person in charge (PIC) voluntarily discarded the items during the inspection. See embargo form. Establishment has additional walk-in refrigerator onsite.

Containers of cooked Spanish rice and cooked charro beans were observed inside primary walk- in refrigerator with no dates indicated. Please ensure ready-to-eat TCS foods are labeled with either the date the item is prepped or the date the item will be discarded (prep date + 6 days). Per PIC, items were prepped 3 days prior to inspection. PIC provided date labels to correct during the inspection.

Ambient temperature of secondary walk-in refrigerator was measured at 55F with min-max thermometer during the inspection with out-of-temperature TCS foods stored inside. Please ensure all refrigeration can hold cold at 41F or colder. Unit may not be used for storage of TCS foods until repairs are complete or unless door to connected walk-in freezer is kept open at all times until repairs are complete and unit can hold cold at 41F or lower. PIC placed work order during the inspection. 10-Day Re-Inspection - re-inspection will occur on or before December 12, 2023.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
