Cooked Pork Loin in steam table at 120*F. Per Manager the pork was cooked within the last two hours and put in steam table for hot holding. Discussed, except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher when hot holding. At time of inspection, Manger put pork in oven to reheat to 165*F. After discussion with the Manager, it has been determined that the root cause of the violation was not reheating cold cooked pork to 165*F and then holding above 135*F which resulted in the violation.”
