Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking. ===> Observed cut lettuce, sausage links, patties, and crumbles, pureed ham and an open deli turkey in the reach-in and walk-in cooler without date marks. According to PIC, the TCS foods were opened, prepped or cooked within the previous 2 days of inspection. PIC will label the TCS foods with the correct date and retrain employees on proper date marking. Core-4-402.11, C: Fixed Equipment, Spacing or Sealing ===> Observed gaps in between the walls and the 3-compartment sink, prep sink and drainboard of the dish machine. Please re-caulk around the sinks and drainboard. Equipment that is stationary (not easily moved) and subject to moisture must be sealed and maintained to prevent the harborage of insects and rodents. CORRECT PRIOR TO NEXT ROUTINE INSPECTION Core-4-101.19, C: Nonfood-Contact Surfaces ===> Observed two unsealed blocks of wood being used to elevate the 3-door reach-in refrigerator. The top and bottom surfaces of the wood is in direct contact with the bottom of the reach-in and the floor. Discussed sealing all sides of the wood, including the top and bottom, or replacing with wheels, legs etc. that are made of a durable and non-absorbent material. Also observed the floor in the walk-in cooler to be rusted and pitted. Please repair the walk-in floor to a smooth and easily cleanable surface. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
