PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. ====Observed low temperature chlorine dish machine with 0ppm Chlorine with establishment and inspector test strips. Notified Person In Charge (PIC). Observed machine in use prior to testing for cleaning cups and dishes. Retested the machine after priming the machine for 30 seconds. Concentration of chlorine is at 100ppm. PIC directed dish pit employee to rewash food contact equipment listed. ===Observed on clean wire rack with several stainless steel clean containers with black/brown/red organic matter. Notified Person In Charge (PIC). PIC will have employee re-wash;rinse and sanitize. ========Equipment food contact surfaces and utensils shall be clean to sight and touch.
