PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed several TCS items such as cooked beef, cooked noodles, and bean sprouts in the large cold unit at the cook with an internal temperature between 47-50 degrees F. while the unity ambient air temperature was at 52 degrees F. when monitoring during this inspection. Per the person in charge, these items were placed in the cold unit an hour before this inspection. The person in charge was educated that except during preparation, cooking, cooling, or when time is used as control all TCS food to be maintained at 41°F or less. PIC corrected by removing items to the walk-in refrigerator for rapid cooling, and will placed items in an ice bath until the unit can be maintained 41°F or less.

Observed the large cold holding unity located at the cook station, with an ambient temperature of 52 degrees F. during this inspection. See violation #20. The person in charge contacted the technician for repairs during this inspection. PIC was asked to repair and will continue to use an ice bath for all TCS items until the unit can be maintained at 41°F or less. A re-inspection will be conducted within 10 days. Discussed cold holding policy and equipment management.
