These items were stored inside of a double door glass cooler only meant to hold beverages per the manufacturer. PIC discarded the whip cream, and moved the salsa to a commercial refrigerator to rapidly cool. Per PIC the salsa was less than 3 hours ago. All TCS foods must maintain a temperature of 41'F or colder.

PRIORITY VIOLATION-4-101.11 (A), P: Characteristics-Multiuse; Safe---Observed a plastic grocery bag inside of a chest freezer containing raw carne asada. Employee removed the carne asada from the bag and placed it inside of a food grade bag. Materials that are used in the construction of utensils and food-contact surfaces of equipment may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be safe.
