PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Per employee quat sanitizer was being used to sanitize the dishes. Concentration of the quat sanitizer was measured at less than 100 ppm. Employee drained the water and added new water with chlorine. The chlorine concentration was measured at 50 ppm. Employee re-sanitized the dishes. Discussed with PIC that quat sanitizer must be betwwen 150- 400ppm (or according to the manufacturer), and chlorine sanitizer must be between 50-100 ppm at all times. Use test strips to make sure the sanitizer concentration is at the correct level.

Employees removed these items from the bags and placed them in ziploc bags at the time of inspection. Materials that are used in the construction of utensils and food-contact surfaces of equipment may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be safe. ***Repeat violation
