For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. ------ In the walk in cooler, observed two large metal pans of cooling green chili beef with internal temperatures ranging from 72-96*F when measured with a probe thermometer. Observed more than 6 inches in each pan and the top pan stacked perpendicular to the lower pan. PIC stated that the beef had been removed from the heat at 1:30pm, cooled in an ice bath directly from the heat and then placed in the cooler. Observed a similar dish cooling via the same method that was still holding above 135*F in an ice bath 1.5 after removing from the heat. Discussed that cooked foods may first be air cooled to 135*F before placing in an ice bath or cooler. Since the green chili beef had been cooling for approximately 1-1.25 hours, the manager had the food separated into two additional pans that were placed in high airflow areas to facilitate faster cooling. Advised PIC to removed non-TCS foods stored in the walk in to free additional cooling spaced. Also discussed purchasing a speed rack to utilize the high airflow space in the center of the walk in cooler.

Notice of Inspections Rights were verbally reviewed with manager, Javier E. A copy of the report was emailed to the manager. No County legal action will result from this inspection.
