Core-6-101.11, C: Surface Characteristics-Indoor Areas ------- Materials for indoor floors some sections of walls are not smooth, durable, nonabsorbent and/or easily cleanable and/or not constructed of proper materials. The concrete floor is eroding and unsealed with exposed aggregate rock multiple areas. Observed walls behind cooking equipment (from the exhaust hood to the floor) not fully of metal, ceramic tiles or other easily cleanable durable material. Advised PIC to repair floors, patch walls and cover entirely with stainless steel prior to the next routine inspection. Advised PIC to seal gaps with high-temperature metallic silicone. Core-6-501.12, C: Cleaning, Frequency and Restrictions ------ Observed an accumulation of grease and food debris on and below the shelving of the steam table and areas of the cook line. Also observed an accumulation of food debris on the wire racks on the far wall from the fan with an accumulation of food debris and rusting areas. Clean areas and maintain a regular cleaning frequency to prevent buildup. PIC stated they are replacing racks over the next several months and that the racks would be cleaned ASAP.

This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation and 2 Core Violations on this inspection. Of note: -Establishment is planning to make upgrades to kitchen and bar areas. Discussed that if materials are swapped like-for-like no remodel application is required. Discussed is changes are made to plumbing, electrical or equipment to apply for a remodel online at: https://esd.maricopa.gov/FormCenter/Environmental-Services-16/Food-Establishment-Permit-Application-Pe-307 -Discussed that a hand sink will be required at the bar if changes are made or a handwashing violation in the area is observed. A copy of the report was emailed to the manager. No County legal action will result from this inspection.
