PIC stated they had received shipment had had limited space for storage. Advised PIC to moved RTE foods above the kegs if short on storage. Had manager move raw items to the bottom shelves. When storing raw food items, please ensure that they are stored according to their cooking temperature, with raw products always stored below ready-to-eat foods. Proper food storage of raw products prevents cross contamination that can lead to foodborne illness.

Core-3-304.14, C: Wiping Cloths, Use Limitation ------ Observed 2 damp wiping cloths stored on the prep cooler counter. Discussed that unless dry, sani towels should be kept in an approved sanitizer at the appropriate concentration (50-100ppm for chlorine). The manager removed the wet towels to be cleaned and placed new towels on the counter stored in a chlorine solution measuring 50ppm.

Core-6-101.11, C: Surface Characteristics-Indoor Areas ------- Materials for indoor floors some sections of walls are not smooth, durable, nonabsorbent and/or easily cleanable and/or not constructed of proper materials. The concrete floor is eroding and unsealed with exposed aggregate rock multiple areas. Observed rough textured sections of ceiling near the kitchen entrance. Observed walls behind cooking equipment (from the exhaust hood to the floor) not fully of metal, ceramic tiles or other easily cleanable durable material. Advised PIC to repair floors, patch walls and cover entirely with stainless steel prior to the next routine inspection. Advised PIC to seal gaps with high-temperature metallic silicone. Core-6-501.12, C: Cleaning, Frequency and Restrictions ------ Observed an accumulation of grease and food debris on and below the shelving of the steam table and areas of the cook line. Also observed an accumulation of food debris on the wire racks on the far wall from the fan with an accumulation of food debris and rusting areas. Clean areas and maintain a regular cleaning frequency to prevent buildup. PIC stated they are replacing racks over the next several months and that the racks would be cleaned ASAP.

Discussed that if materials are swapped like-for-like no remodel application is required. A copy of the report was emailed to the manager. No County legal action will result from this inspection.
