PRIORITY VIOLATION-3-501.14, P: Cooling. ===> Observed a shallow metal pan, partially covered, with cooked breaded chicken, stored at room temperature on the table at the end of the cook-line. According to PIC, the chicken began cooling 2.5 hours prior to the inspection; observed an internal temperature of 86-90F, probe thermometer, verified by PIC. PIC discarded the chicken for failing to reach 70F in the first 2 hours of cooling, see embargo form. Reviewed the cooling log and times/temps that are posted on the wall across from the walk-ins. PIC will retrain employees on cooling times, temperatures and methods. Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods ===> Observed missing grout and tiles on the floor in the dishwashing room and in the beverage area where the juice, coffee and ice machine is located. The tiles around the floor sink under the dish machine are missing, which creates a large space for water and debris to pool. Smooth and easily cleanable surfaces will prevent soil/water pooling and eliminates voids which could attract pests such as insects and rodents or contribute to problems with certain pathogens such as Listeria.
