Second employee handled personal phone and face mask, then went to handle clean equipment and utensils without washing hands. Both employees were asked to wash hands. Ensure that employees wash hands after engaging in activities that may contaminate hands and when changing tasks.

Ham sandwiches, burger patty, cheeseburger, and cauliflower item-56-87F on counter in front of the steam table and over the steamer. PIC stated that the cauliflower had been stored over the steamer for about an hour and relocated to the walk in cooler. PIC voluntarily discarded all other items-see embargo form. Keep PHF/TCS foods in cold holding at 41F or below.

PIC stated that all items were recently placed into cooler and uncovered all products. Ensure that food items are cooled in equipment that is arranged to facilitate heat transfer and is loosely covered and/or uncovered if protected from overhead contamination.

This establishment received a(n) C Grade and had 2 Priority, 0 Priority Foundation and 3 Core violations on this inspection. Core-2-102.12(A), C: Certified Food Protection Manager----The PIC was unable to provide a certified food protection manager certificate. Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one certified Food Protection Manager (CFPM) on staff. The Person in Charge shall be a CFPM and is required to be onsite during the hours of operation. This certificate must be visible or readily accessible and kept at the establishment for all inspections. Provided the PIC with when to wash and cooling guideline handouts. Emailed the inspection report. No County legal action will result from this inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
