PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. >>> Observed cooked chicken and mushrooms, mashed potatoes, marsala gravy, green beans and cooked hamburger patties hot holding in the steam table with internal temperatures of 97-110F, probe thermometer, verified by PIC. According to PIC, the hot TCS foods were placed into the steam table less than an hour prior to inspection. Leftovers will not be saved and the lunch service lasts around 45 minutes. Cook began reheating the burger patties. All TCS foods will be reheated to at least 165F. Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability >>> Observed missing floor tiles under the dish machine and several areas of missing grout between the floor tiles in the dish room. Discussed repairing the tile and grout to deter pests and pathogen growth. Smooth and easily cleanable surfaces will prevent soil/water pooling and eliminates voids which could attract pests such as insects and rodents or contribute to problems with certain pathogens such as Listeria.

Core-2-102.12(A), C: Certified Food Protection Manager ===> Certified food protection manager not at establishment during the inspection. Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one certified Food Protection Manager (CFPM) on staff. The Person in Charge shall be a CFPM and is required to be onsite during the hours of operation. This certificate must be visible or readily accessible and kept at the establishment for all inspections. Emailed CFPM info. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
