Observed lasagna (117°F- 136°F) cooling, on a cooling rack, at room temperature. Staff said the lasagna had been placed on the cooling rack an hour prior to the temperature measurement. EHS had an employee move the lasagna to the walk in, at time of inspection. Discussed cooling methods and requirements with staff. Time Temperature Control for Safety (TCS) foods to be placed under active temperature control after foods reach below 135°F when cooling. Emailed an additional cooling guidance document to establishment.

Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed missing ceiling tiles in the back storage area, pealing calking around the coved base by the ice machine, and cracked crumbling grout throughout much of the kitchen. Establishment to fix these areas before the next routine inspection. Discussed smooth and easily cleanable surfaces and educated on the importance of securing the facility from potential pests.
