The PIC stated that both items were made and began cooling within the last two hours and relocated to the walk in cooler to properly cool. Ensure that food items are cooled in equipment that is arranged to facilitate heat transfer.

Discussed with the PIC about ensuring that employees eat and drink in designated areas away from open food items and that employees are limiting contamination of ready to eat foods by wearing gloves or by other approved methods Reviewed HACCP logs from 3-12-24, 4-5-24, and 4-6-24. Emailed the inspection report. No County legal action will result from this inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
