Core-3-305.11, C: Food Storage-Preventing Contamination from the Premises Observed a tub of covered raw chicken being stored directly on the ground of the walk in. Per PIC, there was no room at the time the chicken was being cut to store directly on the shelf. PIC made room on shelving in walk in at time of inspection to place tub of chicken off the ground at time of inspection. Observed multiple sealed boxes of food in both walk in coolers being stored directly on the ground. Discussed that foods should be stored at least 6 inches off the floor to prevent contamination and allow for thorough cleaning of facilities. Move foods so they are stored properly on approved storage racks prior to the next routine inspection.
