For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4573/AMC-Toolbox---Handwashing. --Observed handwashing sink located behind the bakery display area with a container filled with water and other small food debris inside the bottom of the hand sink mostly caused by rinsing food equipment. Discussed with PIC that handwashing sinks should be free of obstacles and only be operated for handwashing and no other purpose. PIC removed container at the time of inspection.

After running machine twice, temperature test strips indicated that the minimum sanitation temperature of 160*F was not reached. Discussed with PIC that plate contact surface on a high temperature dishwasher must reach at least 160*F. PIC will stop use of mechanical warewashing equipment and use 3-compartment sink for all sanitation until equipment is properly repaired. PIC placed repair order at time of inspection.
