Observed sliced lemons and straws in the hand sink. PIC removed the items. Hand sinks must be used only for hand washing only.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed a large round container holding shredded cheese and sitting on another container of ice across from the stove holding 41-55F. Per PIC, the cheese was placed there an hour prior. It was determined that the container of ice was too small to allow the ice to reach the top layers of the cheese. PIC moved the cheese to smaller container and then placed it in the freezer for rapid cooling. Also observed hot sauce made from non TCS sauce chili and TCS sauce from cans holding 45.8-51F in the bar. The hot sauce was sitting on ice for over an hour, per PIC. The hot sauce was moved to the freezer to cool. TCS foods must hold 41F or below. *2nd repeat violation

Observed shredded chicken used for tacos in a metal container in the walk in refrigerator made on 10/21. PIC discarded the chicken. TCS foods must be held for no more than 7 days.

Inspection was emailed A pattern of non-compliance is developing for Priority violation #[20], [P-3-501.16], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.
