Observed prepped chicken empanadas at 45*F, carne asada at 46*F, bagged chopped lettuce at 49*F, cooked sliced chicken at 50*F, and sliced tomatoes at 50*F in prep cooler on cookline. Informed by employee that all items had been placed in the prep cooler at 10:30am. Food items have been in the fridge for two hours, had employee move all items from cooler to walk in fridge unit to get to under 41*F. Prep cooler had an ambient air temperature of 49*F. PIC called to have maintenance on prep cooler. Cold held TCS items need to be held at or below 41*F to combat growth of illness causing bacteria.
