Food items shall be stored at least 6 inches off the ground to prevent contamination. Manager moved tortillas to storage rack in walk in cooler.

Priority Foundation-2-501.11, Pf: Clean-up of Vomiting and Diarrheal Events Observed establishment without written procedure for the response to vomiting and diarrheal events. A food establishment shall have written procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. the procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. Inspector provided printed copy of vomiting/diarrheal event procedures. Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
