Walk-in cooler measured 52-53 degrees F with min/max thermometer at start of inspection, walk-in cooler door had been propped open for nearly an hour prior to inspection and was closed at time. Select time/temperature controlled for safety (TCS) food items measured 51-55 degrees F internally. Items included breakfast sandwiches, deli meat and cheese sandwiches, milk, raw bacon, meat and cheese burritos. Ambient temperature of cooler quickly returned to 40 degrees F after being closed, however a service call was placed anyway. Cooler will be monitored to ensure TCS food items return to temp. Please ensure all TCS food items are maintained at 41 degrees F or below at all times when cold holding.
